Guava and Cream Cheese and Cinnamon Raisin Puff-Pastry Waffles
Today is the last day of ourpuff pastry waffle extravaganza, so it seemed like a good idea to end on a sweet note. I live in a neighborhood with a lot of Colombian bakeries, and one of my favorite treats they sell is a pastry filled with guava paste and cream cheese. It's a magical combination. I couldn't think of a reason why it wouldn't be just as good rolled into puff pastry and cooked on a waffle iron until crisp outside and molten within. (And, having since made and eaten it, I can confirm that itisjust as good. Man, is it good.)
This is another one where the filling can leak out, so it's a good idea to be prepared to catch spills, or set the waffle iron on top of a plate or baking sheet to help contain any mess.
