Why This Recipe Works

  • Cutting the carrots on the bias makes each slice larger and less likely to fall between the grates.
  • Roasting the carrots over indirect heat for 45 to 60 minutes renders them tender throughout and caramelized around the edges
  • Brushing the carrots with a honey and soy sauce mixture in the last minutes of cooking creates a glaze that enhances the sweetness and provides a salty contrast.

These carrots develop a natural sweetness as they're roasted on the grill. A finishing brush with a honey and soy sauce mixture leaves them with a glistening glaze that has a salty depth and a mild ginger and garlic bite.

For the Glaze:

  • 1/4cuphoney(3 ounces; 85g)

  • 1/4cup(60ml)soy sauce

  • 1tablespoondark brown sugar

  • 1 medium clovegarlic, minced (about1teaspoon)

  • 1/2teaspoonfinely gratedfresh ginger

  • 1/4teaspooncrushed red pepper flakes

For the Carrots:

  • 1 1/4 poundscarrots(about6 to 7large), peeled and sliced 3/4-inch thick on a bias

  • 2tablespoons(30ml)extra-virgin olive oil

  • 1scallion, thinly sliced (about 1/4 cup)

  • 1teaspoonDiamond Crystalkosher salt; for table salt, use half as much by volume

Directions

  1. For the Glaze:In a small bowl, whisk together honey, soy sauce, dark brown sugar, garlic, ginger, and crushed red pepper. Set aside.

Cover and cook until tender all the way through, about 45 minutes, using tongs to flip carrots every 15 minutes for even browning.

  4. Brush carrots evenly with glaze. Flip and brush evenly with glaze on the other side; cover grill, and continue to cook for 3 minutes longer.

  5. Transfer carrots to serving bowl, drizzle and toss with additional glaze, garnish with scallion, and serve immediately.

Notes

To roast carrots in the oven, preheat oven to 400ºF (205ºC); place grill pan in oven on center rack. When oven is preheated, place carrot slices on grill pan. Cook until tender all the way through, about 45 to 60 minutes, flipping carrots every 15 minutes for even browning. Proceed with steps 4 and 5.
