Dave Arnold is the former Director of Culinary Technology for the French Culinary Institute in New York (now the Institute for Culinary Education). He is the previous owner and operator of two bars in New York, Booker and Dax and Existing Conditions.
Dave is the founder of the equipment company, Booker and Dax, home of the Spinzall culinary centrifuge and the Searzall handheld broiler. He is the host and source of questionably useful facts for the podcast, Cooking Issues.
